La Pastiera is a worldwide known cake that has conquered the good taste of the most demanding connoisseur of Italian pastry.
It has inspired myths, legends and curious anecdotes.
Many say that it was conjured by the beautiful mermaid Partenope.
Others say that it also made the imperturbable Queen Maria Teresa D'Austria smile because of its unmistakable taste.
Yet there are some others who believe it was the amazing creation of the ingenuity of the nuns in San Gregorio Armeno, a Benedictine convent.

Original “Nonna” Carolina recipe
1) Pour the content of a flask of Miele cooked wheat in a pan. Then, add:
- 300gr of milk
- 1 spoon of butter or lard
2) Boil, mix and stir until the mixture becomes creamy
3) Add the following successively:
- 700gr of Ricotta cheese
- 700gr of sugar
- 7 eggs and 3 egg yolks
- vanilla bean
- 2 ampoules of orange blossom water
- 300gr of pastry cream
Blend all the ingredients until they liquefy.
4) Now prepare the shortcrust pastry with:
- 500gr of flour
- 200gr of sugar
- 200gr of butter or lard
- 3 whole eggs
- A Scratch Of Orange peel
5) Roll pastry firmly, always rolling away from you, give the dough 2-3 rolls. Then place it in a pie mould;
6) Pour the cream in the crust and distribute it evenly;
7) Decorate it with pastry dough strips and bake at 200°C;
